Cooking the Rice

    Prepare the Rice

    In a medium saucepan, combine the long-grain white rice, water, and salt. Bring to a boil over medium-high heat.

    Simmer the Rice

    Once it reaches a boil, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and the water has been absorbed. Remove from heat and let it sit covered for 5 minutes.

Making the Carrot Mixture

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-5 minutes, or until the onion is translucent.

    Add Carrots and Seasoning

    Stir in the grated carrots and cook for another 5 minutes, stirring occasionally. Add the vegetable broth and black pepper, and bring to a simmer.

    Once the carrot mixture is well combined and heated through, add the cooked rice to the skillet. Gently fold the rice into the carrot mixture until evenly distributed.
