Method

Preparation

  1. 1

    Preparing the Beef

Cut the beef into thin strips, about 1/4 inch thick. This helps the meat cook evenly and absorb the marinade.

  2. 2

    Making the Marinade

In a large bowl, combine the ground cayenne pepper, paprika, ground ginger, garlic powder, salt, and black pepper. Mix well.

  3. 3

    Marinating the Beef

Add the beef strips to the spice mixture, ensuring that each piece is well-coated. Drizzle with vegetable oil and mix again. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Cooking

  1. 4

    Preparing the Skewers

If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

  2. 5

    Skewering the Meat

Thread the marinated beef strips onto the skewers, packing them closely together for even cooking.

  3. 6

    Grilling the Suya

Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the meat is browned and cooked through.

  4. 7

    Preparing the Onions

While the beef is grilling, slice the onions into thin rings. You can serve them raw or grill them alongside the skewers for added flavor.

Serving

  1. 8

    Serving the Beef Suya

Serve the grilled beef suya with the sliced onions on the side. You can also serve it with a spicy sauce or a side of salad.
