Prawn Mixture

Akara Batter

BBQ Sauce

Method

Prepare Prawn Mixture

  1. 1

    Marinate the Prawns

In a bowl, combine the peeled and deveined prawns with minced garlic, grated ginger, chili powder, salt, black pepper, and lime juice. Mix well to coat the prawns in the marinade. Cover and let it sit for at least 30 minutes in the refrigerator.

Prepare Akara Batter

  1. 2

    Blend the Batter Ingredients

In a blender, combine the soaked and peeled black-eyed peas, chopped onion, chopped green bell pepper, baking powder, and water. Blend until you achieve a smooth and thick batter. Transfer the batter to a bowl.

Prepare BBQ Sauce

  1. 3

    Mix the BBQ Sauce

In a small bowl, combine ketchup, Worcestershire sauce, honey, smoked paprika, and garlic powder. Stir well until all ingredients are thoroughly mixed. Set aside.

Fry the Akara

  1. 4

    Heat the Oil

In a deep frying pan, heat the oil over medium heat until it reaches 180°C (350°F).

  2. 5

    Combine Prawns with Batter

Remove the marinated prawns from the refrigerator. Fold the prawns into the prepared akara batter, ensuring they are evenly distributed.

  3. 6

    Fry the Akara

Using a tablespoon, scoop the batter with prawns and carefully drop it into the hot oil. Fry in batches, cooking until golden brown on all sides, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Serve

  1. 7

    Serve with BBQ Sauce

Arrange the fried BBQ prawn akara on a serving platter and drizzle with the prepared BBQ sauce. Serve hot and enjoy!
