For the BBQ Cod Collar

    Prepare the Marinade

    In a bowl, mix together olive oil, paprika, garlic powder, salt, black pepper, and lemon juice to form a marinade.

    Marinate the Cod Collars

    Add the cod collars to the marinade and coat well. Allow to marinate for at least 30 minutes.

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill the Cod Collars

    Place the marinated cod collars on the grill and cook for about 4-5 minutes on each side or until cooked through and slightly charred.

For the Moqueca

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and sliced red bell pepper. Sauté until softened, about 5-7 minutes.

    Add Tomatoes and Coconut Milk

    Stir in the diced tomatoes and cook for another 3 minutes. Then add the coconut milk and salt, stirring to combine.

    Simmer the Moqueca

    Bring the mixture to a gentle simmer and cook for about 15 minutes, allowing flavors to meld.

    Finish with Cilantro and Lime Juice

    Remove from heat and stir in the chopped cilantro and lime juice.

For the Swiss Chard

    Sauté Garlic

    In a skillet, heat olive oil over medium heat. Add sliced garlic and sauté for about 1 minute until fragrant.

    Add Swiss Chard

    Add the chopped Swiss chard and sauté until wilted, about 5 minutes.

    Season Swiss Chard

    Season with salt and black pepper to taste, mixing well.
