Infuse the Alcohol
In a large glass jar, combine the neutral grain alcohol with all the herbs and botanicals: sweet orange peel, bitter orange peel, chamomile flowers, saffron, coriander seeds, fennel seeds, cardamom pods, mint leaves, rosemary, thyme, cloves, and juniper berries. Seal the jar tightly.

Steep the Mixture
Allow the mixture to steep in a dark, cool place for 2 to 3 weeks. Shake the jar gently every few days to help the infusion process.

Strain the Mixture
After the steeping time, strain the mixture through a fine mesh sieve or cheesecloth to remove all solids. Discard the solids.

Cool and Bottle
Allow the mixture to cool completely. Once cooled, pour the Amaro Montenegro into clean bottles and seal tightly. Store in a cool, dark place.
