Soak the Black-eyed Peas
Rinse the black-eyed peas under cold water. Place them in a bowl and cover with water. Let them soak for at least 6 hours or overnight.

Peel the Black-eyed Peas
After soaking, drain the peas. Rub them between your hands to loosen the skins. Discard the skins and rinse the peas again.

Blend the Ingredients
In a blender or food processor, combine the peeled black-eyed peas, chopped onion, scotch bonnet pepper, and salt. Add 1 cup of water and blend until smooth. The mixture should be thick and fluffy.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat. You can test if the oil is hot enough by dropping a small amount of the batter; it should sizzle and rise to the surface.

Fry the Akara
Using a spoon or your hands, scoop out small portions of the batter and carefully drop them into the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes on each side until golden brown.

Drain and Serve
Once golden brown, use a slotted spoon to remove the akara from the oil and place them on paper towels to drain excess oil. Serve hot with your choice of dipping sauce or enjoy plain.
