Guava Sorbet

    Prepare the Guavas

    Wash the ripe guavas thoroughly under running water. Cut them in half and scoop out the pulp into a blender.

    Blend Ingredients

    Add sugar, lime juice, and water to the blender with the guava pulp. Blend until smooth and well combined.

    Chill the Mixture

    Pour the blended mixture into a shallow dish and place it in the freezer. Let it freeze for about 3-4 hours, stirring every 30 minutes to break up ice crystals.

    Final Freeze

    Once the mixture is fully frozen and has a smooth texture, transfer it to an airtight container and freeze for an additional 1-2 hours before serving.

Yogurt Meringue

    Prepare Egg Whites

    In a clean bowl, add the egg whites and beat them with an electric mixer on medium speed until soft peaks form.

    Add Sugar Gradually

    Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until stiff peaks form and the mixture is glossy.

    Add Vanilla Extract

    Gently fold in the vanilla extract until fully incorporated.

    Incorporate Yogurt

    Carefully fold in the Greek yogurt until the mixture is well combined and smooth. Be gentle to maintain the volume of the meringue.

    Pipe or Dollop

    Transfer the yogurt meringue to a piping bag or use a spoon to dollop onto a baking sheet lined with parchment paper.

    Bake in a preheated oven at 200°F (93°C) for about 1.5 hours or until the meringues are dry and can easily be lifted off the parchment paper. Turn off the oven and let them cool inside.
