Prepare Wings

Thaw and dry

If wings are frozen, thaw in the refrigerator overnight. Pat the wings very dry with paper towels — removing surface moisture helps achieve crispness without breading.

Trim any excess skin or wing tips if not already removed. Place wings in a large bowl or on a rimmed tray.

Season wings evenly with kosher salt and freshly ground black pepper. Toss to distribute.

Apply Dry Rub (optional)

In a small bowl combine garlic powder, onion powder, smoked paprika and cayenne. Sprinkle the dry rub over the wings and toss until evenly coated. This step is optional — the wings are considered 'naked' (no batter) but benefit from a light seasoning.

Cook Wings

Oven method (crisp, hands-off)

Preheat oven to 425°F (220°C). Arrange wings in a single layer on a wire rack set over a rimmed baking sheet (or directly on a lightly oiled baking sheet if no rack). Brush or lightly drizzle the 2 tablespoons of oil over the wings to encourage browning. Roast for 25 minutes, then flip each wing and roast an additional 15–20 minutes until skin is deeply golden and crisp and internal temperature reaches 165°F (74°C). Total time ~40–45 minutes depending on size.

Stovetop / Pan-fry method (faster, extra browning)

Heat a large heavy skillet (cast-iron recommended) over medium-high heat. Add 1 tablespoon oil to coat the pan. Add wings in a single layer without crowding (work in batches if needed). Cook 6–8 minutes per side, lowering heat to medium if they brown too quickly, until evenly crisp and cooked through. Add remaining oil as needed between batches.

Air fryer method (most efficient crisping)

Preheat air fryer to 400°F (200°C). Arrange wings in a single layer in the basket (do not overcrowd). Lightly spray or brush with oil. Air fry for 20–24 minutes, shaking basket or flipping halfway through, until crisp and cooked through.

Finish & Serve

Transfer wings to a serving platter. Squeeze fresh lemon wedges over the hot wings to brighten flavors and sprinkle chopped parsley if using.
