Prepare and blanch cruciferous vegetables

Bring a small pot of salted water to a boil. Add broccoli and cauliflower florets and blanch for 1 minute until bright green and slightly tender. Immediately transfer to an ice bath to stop cooking. Drain and pat dry, then chop into smaller pieces if needed.

Sauté aromatics and vegetables

Heat a 10–12 inch nonstick or well-seasoned skillet over medium heat. Add olive oil and swirl. Add sliced mushrooms and sauté 2–3 minutes until they release moisture and begin to brown. Add thinly sliced red onion and minced garlic; cook 1–2 minutes until fragrant and translucent. Add diced zucchini and sauté 2 minutes. Add blanched broccoli and cauliflower and continue to cook 1–2 minutes to warm through. Stir in chopped spinach and diced tomato; cook another 30–60 seconds until spinach wilts and excess moisture evaporates. Season the vegetable mixture with 1/2 tsp kosher salt, 1/4 tsp black pepper, and the dried oregano. Transfer the vegetable mixture to a bowl and set aside.

Beat the eggs

In a medium bowl, crack 6 large eggs. Add 3 tablespoons whole milk, remaining 1/4 tsp kosher salt, and remaining 1/4 tsp black pepper. Whisk vigorously until combined, slightly frothy, and homogenous (about 20–30 seconds). This helps create a tender omelette.

Preheat pan and melt butter

Wipe the skillet clean and return to medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown; if it begins to brown, lower the heat.

Cook the eggs

Pour the beaten eggs into the skillet and let them sit undisturbed for 10–15 seconds until edges begin to set. Using a spatula, gently push set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue this gently for 45–60 seconds until the top is mostly set but still slightly glossy and moist.

Add filling and cheese

Spread the reserved sautéed vegetables evenly over one half of the omelette. Sprinkle the shredded cheddar and Swiss cheeses evenly over the vegetables (reserve 2 tablespoons cheddar for garnish if desired). If you like a little heat, sprinkle red pepper flakes now.

Fold and finish

Use a spatula to fold the empty half of the omelette over the filled half to create a semicircle. Let cook undisturbed for 30–60 seconds to allow cheese to melt and eggs to finish cooking through (cover the pan with a lid for 30 seconds if you prefer extra melted cheese). Check doneness — the omelette should be set but still moist inside.

Plate and garnish

Carefully slide the omelette onto a plate. Sprinkle the reserved 2 tablespoons shredded cheddar and chopped parsley over the top. Taste and add additional salt or pepper if needed. Serve immediately.
