Prepare eggs

Crack the 4 large eggs into a medium bowl, add 30 ml (2 tablespoons) whole milk, 0.25 teaspoon salt (from the total), and 1/4 teaspoon black pepper. Whisk vigorously until combined and slightly frothy. Set aside.

Cook aromatics

Heat a 10–12 inch nonstick skillet over medium heat. Add 1 tablespoon vegetable oil. When shimmering, add the diced onion and cook 2 minutes until translucent. Add the diced green pepper and cook 2–3 minutes until softened but still bright. Season with a pinch of salt and toss.

Brown beef

Push the vegetables to one side of the skillet, increase heat to medium-high, and add the ground beef. Break it up with a spatula and let it brown without stirring for 1 minute, then continue to break up and cook until no longer pink, about 3–4 minutes. Drain excess fat if there's more than 1 tablespoon, leaving some for flavor.

Spice the beef

Reduce heat to medium. Sprinkle in 0.5 teaspoon ground cumin, 0.5 teaspoon chili powder, 0.25 teaspoon smoked paprika, 0.5 teaspoon kosher salt (adjust to taste), and 0.25 teaspoon black pepper. Stir to combine. If using the optional seasoning paste, add the tomato paste mixed with 1 teaspoon water and 0.25 teaspoon salt now and stir for 30 seconds to incorporate. Taste a small piece and adjust seasoning if needed.

Add tomato and finish filling

Stir in the diced Roma tomato and cook 1 minute just to warm and slightly soften the tomato, keeping some texture. Remove the beef and vegetable filling to a separate bowl or push to the side of the skillet and wipe a clear space for the omelette.

Cook the omelette

Reduce heat to medium-low. Add 1 tablespoon unsalted butter to the cleared area of the skillet and let it foam. Pour the whisked eggs into the skillet, tilting the pan to distribute evenly. Use a spatula to gently push set edges toward the center, letting uncooked egg flow underneath. Cook until eggs are mostly set but still slightly moist on top, about 2–3 minutes.

Add filling and cheese

Spoon the warm spiced beef and vegetable filling over one half of the omelette in an even layer. Sprinkle the shredded cheddar (about 75 g) over the filling. Allow 30–45 seconds for the cheese to begin melting.

Fold and finish

Using a spatula, carefully fold the empty half of the omelette over the filled half to form a semicircle. Let cook 30 seconds more to ensure the center reaches a safe temperature (beef is already cooked). Slide the omelette onto a plate seam-side down. Sprinkle chopped cilantro on top, if using, and serve with lime wedges and nacho chips on the side.

Plating and serving

Arrange the nacho chips alongside the omelette so they can be used to scoop some of the filling. Optionally garnish with extra shredded cheddar and a dusting of smoked paprika. Serve immediately while hot.

Leftovers: refrigerate any leftover filling and cooked omelette in an airtight container for up to 2 days. Reheat gently in a skillet over low heat or in a microwave until warmed through.
