Prep the fillings

Chop and pre-cook

Prepare all filling ingredients: dice onion and bell pepper, slice mushrooms, chop tomato (remove seeds), chop ham and crumble cooked sausage if using. Roughly chop spinach and chives. Measure cheeses. This recipe assumes using multiple fillings; if you prefer fewer, adjust quantities.

In a medium nonstick skillet over medium heat, add 1 teaspoon butter and 1 teaspoon neutral oil (optional). Add diced onion and bell pepper and cook, stirring occasionally, until softened, about 4 minutes.

Add sliced mushrooms and a pinch of salt and cook 3–4 minutes until mushrooms release liquid and begin to brown. Add chopped tomato and spinach and cook 1–2 minutes until spinach wilts and excess moisture evaporates. Transfer cooked vegetable mixture to a bowl and set aside.

If using raw breakfast sausage or bacon, cook separately until fully done, then drain and crumble. If using deli ham, briefly sauté diced ham 1–2 minutes in the skillet to warm and brown slightly. Add cooked meats to the bowl with vegetables.

Make the omelette

Crack 6 cage-free eggs into a large mixing bowl. Add 3 tablespoons whole milk, 1 teaspoon fine sea salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform, slightly frothy, and pale yellow, about 30–45 seconds.

Heat a 10–12 inch nonstick or well-seasoned skillet over medium-low to medium heat. Add 2 tablespoons unsalted butter and let it melt and foam without browning—about 30–45 seconds. Swirl the pan to coat the bottom evenly.

Pour the beaten eggs into the skillet. Let the eggs set undisturbed for 20–30 seconds at the edges. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg fills the gaps. Continue this motion every 15–20 seconds until the top is mostly set but still glossy and slightly wet—about 2–3 minutes total.

Evenly distribute the cooked vegetable and meat mixture over one half of the omelette. Sprinkle shredded cheddar (and/or crumbled feta) evenly over the same half, leaving a 1/2-inch border to make folding easier. Allow the cheese to start melting, about 30–45 seconds.

Using the spatula, carefully fold the empty half of the omelette over the filled half to form a semi-circle. Press gently to seal and cook for another 30–45 seconds to finish cooking through but keep the interior tender. If needed, reduce heat to low to avoid overbrowning.

Tilt the pan and slide the folded omelette onto a warm plate. Let it rest 30 seconds so residual heat finishes the cheese melt and eggs set.

Finish and serve

Garnish the giant omelette with chopped fresh chives. Season with additional salt and pepper to taste if desired.

Serve immediately with your choice of accompaniment: two slices of toast (wheat, rye, sourdough, pumpernickel or challah), a wheat English muffin, a bagel, or a bran muffin. If toasting bread, butter lightly and serve hot alongside the omelette.
