Prepare Fillings

Prep vegetables and proteins

If using mushrooms, onion, bell pepper or tomatoes: slice or dice so pieces are roughly uniform. If using raw proteins (bacon or sausage), cook them until done — bacon crisped and drained, sausage browned and crumbled. Dice ham if not pre-diced.

Sauté vegetables: heat a nonstick or stainless steel skillet over medium heat and add 1 teaspoon butter or oil. Add diced onion and bell pepper; cook 3–4 minutes until softened. Add mushrooms and cook 3–4 more minutes until mushrooms release liquid and it evaporates. Add spinach last and cook 30–60 seconds until wilted. Season vegetables lightly with a pinch of salt and pepper. Remove vegetables to a plate.

Warm proteins: in the same skillet, briefly warm diced ham, cooked sausage, and chopped bacon for 1–2 minutes so they are hot and can release flavor into the omelette. Remove to plate with vegetables. Keep skillet clean and lightly wiped if excess fat remains, leaving a thin coating for flavor.

Make Omelette Base

Whisk eggs: in a medium bowl, crack 6 large eggs. Add 3 tablespoons whole milk (for a tender texture), 1 teaspoon kosher salt, and 1 teaspoon black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds).

Heat pan and melt butter: place a 10–12 inch nonstick or well-seasoned skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and swirl to coat. The butter should foam but not brown.

Pour eggs and begin cooking: pour the beaten eggs into the skillet. After 10–15 seconds, as the edges begin to set, use a silicone spatula to gently push set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Continue this motion for 60–90 seconds until the eggs are mostly set but still slightly glossy on top.

Assemble and Finish

Add fillings: spread the sautéed vegetables and warmed proteins evenly over one half (or across the center) of the omelette. Sprinkle shredded cheeses (cheddar and/or monterey jack) evenly over the fillings so cheese will melt and bind them.

Fold and melt: using the spatula, fold the empty half of the omelette over the filled half to create a crescent. Press gently and cook for another 60–90 seconds to allow cheese to melt and the interior to finish cooking. If you prefer a firmer interior, cover the skillet for 30–45 seconds on low heat to steam through.

Finish and plate: carefully slide the giant omelette onto a serving plate. Sprinkle with chopped chives and fresh herbs. Add a dollop of sour cream or a few dashes of hot sauce if desired.

Toast / Muffin / Bagel

Prepare accompaniment: toast two slices of bread or one muffin/bagel to desired doneness. Butter immediately if desired. Serve alongside the omelette while hot.

Serve: cut the giant omelette in half or leave whole and serve with your choice of toast, muffin, or bagel. Recommend 1 omelette per 2 people as a lighter meal or 1 per person as a substantial breakfast (this recipe yields a generous single omelette).

Customization tips: you can omit dairy (leave out milk and cheese) or use alternative cheeses. For a lighter omelette, reduce eggs to 4 and adjust fillings proportionally. Ensure all fillings are pre-cooked or sautéed to avoid excess moisture inside the omelette.
