Preparing the Wild Boar Chop

Season the Texas wild boar chops with salt and pepper on both sides. Let them sit at room temperature for about 30 minutes.

Cook the Chops
Heat a grill or grill pan over medium-high heat. Once hot, add the seasoned wild boar chops. Grill for about 6-8 minutes on each side or until they reach an internal temperature of 145°F (63°C). Remove from grill and let rest.
Making the Mushroom Demi-Glace

Prepare the Sauce
In a saucepan over medium heat, combine the mushroom demi-glace with a splash of water or stock to thin it out slightly. Bring to a gentle simmer and let it reduce for about 10 minutes, stirring occasionally.
Grilling Asparagus and Roasting Carrots

Roast the Carrots
Preheat the oven to 400°F (200°C). Peel and cut the carrots into sticks. Toss them with butter, salt, and pepper, and spread them on a baking sheet. Roast for about 25-30 minutes until they are caramelized and tender.
Making Herb Spätzle

Prepare the Spätzle Batter
In a mixing bowl, whisk together the flour, eggs, milk, salt, pepper, and chopped parsley until smooth.

Bring a large pot of salted water to a boil. Using a spätzle maker or a colander, press the batter into the boiling water. Cook for 2-3 minutes or until they float to the top. Remove them with a slotted spoon and set aside.
