Preparing the Pork Cutlets

Pound the Pork
Place the pork cutlets between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.

Season the Cutlets
Sprinkle both sides of the cutlets with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and breadcrumbs in the third.

Bread the Cutlets
Dredge each cutlet in flour, shaking off the excess, dip in the beaten eggs, and then coat thoroughly with breadcrumbs. Set aside on a plate.
Frying the Cutlets

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Cutlets
Carefully place the breaded cutlets in the hot oil and fry for about 3-4 minutes on each side, or until golden brown and cooked through.

Remove the cutlets from the skillet and let them drain on paper towels to remove excess oil.
