Schnitzel Preparation

Prepare the Cutlets
Tenderize the pork or veal cutlets with a meat mallet until they are about 1/4 inch thick. Season both sides with salt and black pepper.

Bread the Cutlets
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each cutlet in flour, dip in beaten eggs, and coat with bread crumbs.

Fry the Schnitzels
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded cutlets for 3-4 minutes per side, or until golden brown. Remove and place on a paper towel-lined plate to drain.

Make the Sauce
Add chicken broth and bring to a simmer, scraping up any browned bits from the skillet. Stir in heavy cream, and let it thicken for about 3-5 minutes. Season with salt, pepper, and chopped parsley.

Cook the Spätzle
Bring a large pot of salted water to a boil. Using a spätzle maker or a colander, drop the batter into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
