    Prepare the Cabbage

    Remove the outer leaves from the cabbage. Cut the cabbage into quarters and remove the core. Slice the cabbage into thin ribbons.

    Grate the Carrot

    Peel the carrot and grate it using a box grater or food processor. Set aside.

    Mince the Garlic

    Peel and mince the garlic cloves finely.

Mixing and Fermentation

    Combine Ingredients

    In a large mixing bowl, combine the sliced cabbage, grated carrot, minced garlic, sea salt, and caraway seeds. Mix well, using your hands to massage the salt into the vegetables for about 5-10 minutes until the cabbage becomes limp and releases its juices.

    Pack into Jar

    Transfer the mixture into a clean pint jar, pressing down firmly to eliminate air pockets. Pour in the filtered water, ensuring the vegetables are submerged under the brine. Leave about an inch of space at the top of the jar.

    Seal and Store

    Seal the jar with a lid, but do not tighten it completely. Place the jar in a cool, dark place to ferment for 1-2 weeks, checking it daily. If needed, press the vegetables down to keep them submerged.

    Taste and Adjust

    After a week, start tasting the sauerkraut daily. Once it reaches your desired tanginess, tighten the lid and move it to the refrigerator to slow down the fermentation.
