Method
Roasted Angus Striploin

Prepare the Striploin
Preheat the oven to 400°F (200°C). Rub the Angus striploin with olive oil, salt, black pepper, and fresh rosemary. Let it marinate for at least 30 minutes.

Roast the Striploin
Place the striploin on a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Let it rest for at least 10 minutes before slicing.

Add Beef Stock & Cream
Pour in the beef stock and bring to a simmer. Add the heavy cream and whole black peppercorns. Simmer for about 20 minutes until the sauce thickens.
Green Bean & Bacon Bundle

Prepare the Green Beans
Trim the ends of the green beans and wash them thoroughly.

Wrap with Bacon
Take a handful of green beans and wrap them with a slice of bacon. Secure with a toothpick if necessary. Repeat until all green beans are wrapped.

Make the Cream Mixture
In a bowl, mix together the heavy cream, minced garlic, salt, and black pepper.

Layer the Gratin
In a greased baking dish, layer half of the sliced potatoes, followed by half of the cream mixture, and half of the Gruyère cheese. Repeat the layers.
