Method

Roasted Angus Striploin

    Prepare the Striploin

    Preheat the oven to 400°F (200°C). Rub the Angus striploin with olive oil, salt, black pepper, and fresh rosemary. Let it marinate for at least 30 minutes.

    Roast the Striploin

    Place the striploin on a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Let it rest for at least 10 minutes before slicing.

Peppercorn Demi Glaze

    Sauté the Shallots

    In a saucepan, sauté the chopped shallot in a little olive oil over medium heat until translucent.

    Deglaze with Red Wine

    Add the red wine to the pan and bring it to a boil, scraping the bottom to deglaze. Reduce the wine by half.

    Add Beef Stock & Cream

    Pour in the beef stock and bring to a simmer. Add the heavy cream and whole black peppercorns. Simmer for about 20 minutes until the sauce thickens.

Green Bean & Bacon Bundle

    Prepare the Green Beans

    Trim the ends of the green beans and wash them thoroughly.

    Wrap with Bacon

    Take a handful of green beans and wrap them with a slice of bacon. Secure with a toothpick if necessary. Repeat until all green beans are wrapped.

    Cook the Bundles

    In a skillet, heat olive oil over medium heat. Add the bacon-wrapped green bean bundles and cook until the bacon is crispy and the green beans are tender, about 10-15 minutes. Season with salt and pepper.

Gratin Dauphinoise

    Prepare the Potatoes

    Peel and thinly slice the potatoes using a mandoline or sharp knife.

    Make the Cream Mixture

    In a bowl, mix together the heavy cream, minced garlic, salt, and black pepper.

    Layer the Gratin

    In a greased baking dish, layer half of the sliced potatoes, followed by half of the cream mixture, and half of the Gruyère cheese. Repeat the layers.

    Bake the Gratin

    Cover with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.
