Prepare the Meat
Cut the pork shoulder into large cubes, ensuring to trim off excess fat.

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent (about 5 minutes).

Brown the Pork
Add the pork shoulder cubes to the pot and brown on all sides, approximately 8-10 minutes.

Add Remaining Ingredients
Add in the chopped carrots, celery, and potatoes, followed by the vegetable broth. Stir in the salt, black pepper, thyme, paprika, and bay leaves.

Simmer the Stew
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours or until the pork is tender and the vegetables are cooked through.

Remove the bay leaves from the pot. Stir in the chopped fresh parsley before serving hot.
