Combine Milk and Cream
In a large saucepan, combine the whole milk and heavy cream. Stir gently to mix the two together.

Heat the Mixture
Place the saucepan over medium heat and slowly heat the mixture until it reaches about 190°F (88°C). Stir occasionally to prevent scorching.

Add Lemon Juice
Once the mixture has reached the desired temperature, remove it from the heat. Stir in the lemon juice. Let it sit undisturbed for about 10 minutes to allow the curds to form.

Strain the Curds
After the resting period, line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain away.

Rinse and Season
Rinse the curds under cold water to remove any residual whey. Sprinkle the salt over the curds and gently mix it in.

Drain and Store
Gather the corners of the cheesecloth and twist to form a pouch. Hang the pouch over the sink or a bowl to drain for about 30 minutes. Once drained, transfer the quark to a clean container and refrigerate.
