Pretzel Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

Make the Dough
In a large mixing bowl, combine the flour and salt. Once the yeast mixture is foamy, add it to the flour along with additional warm water and mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzels
Preheat the oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon.

Place the pretzels on a parchment-lined baking sheet, sprinkle with coarse sea salt, and bake for 12-15 minutes or until golden brown.

In a bowl, hard boil the eggs for 10 minutes. Once cooled, peel the eggs and chop them finely. Combine the chopped eggs with mayonnaise, Dijon mustard, salt, and black pepper. Mix well.
