Nusskuchen (Nutcake)

    Prepare the Batter

    In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Mix Dry Ingredients

    In another bowl, whisk together the ground almonds, ground hazelnuts, all-purpose flour, baking powder, and salt.

    Combine Mixtures

    Gradually add the dry ingredients into the wet mixture, stirring until just combined.

    Bake the Cake

    Preheat your oven to 350°F (175°C). Pour the batter into a greased and floured cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Burnt Honey Ice Cream

    Burn the Honey

    In a saucepan, heat the honey over medium heat, stirring frequently until it turns a dark amber color and begins to smoke. Remove from heat and let cool slightly.

    Prepare the Ice Cream Base

    In a separate saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is warm.

    Combine Egg Yolks

    In a bowl, whisk together the egg yolks. Slowly pour the warm cream mixture into the egg yolks while whisking constantly to temper the yolks.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly. Remove from heat and stir in the burnt honey, vanilla extract, and a pinch of salt.

    Chill and Churn

    Transfer the mixture to a bowl, cover, and refrigerate until cold. Churn in an ice cream maker according to the manufacturer's instructions.

Fresh Fruit and Berries

    Prepare the Fruit

    Wash and slice the strawberries. Combine them with blueberries and raspberries in a bowl. Set aside for garnish.

Chantilly Cream

    Whip the Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer, whip until soft peaks form.

Chocolate Ganache

    Prepare the Ganache

    Chop the dark chocolate into small pieces and place them in a bowl. In a saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate and let sit for 2 minutes. Stir until smooth and glossy.
