Prepare the Cedar Plank
Soak the cedar plank in water for at least 1 hour prior to cooking.

Marinate the Salmon
In a bowl, combine maple syrup, soy sauce, olive oil, minced garlic, and black pepper. Place the salmon fillet in the marinade and let it sit for 30 minutes.

Roasted Spiced Acorn Squash

Prepare the Squash
Preheat your oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds.

Roast the Squash
Place the squash halves cut side down on a baking sheet and roast for 30-35 minutes, or until tender.
Lemon Arancini

Prepare the Arancini Mixture
In a bowl, mix the prepared risotto with cubed mozzarella, lemon zest, and salt.

Form the Balls
Scoop a tablespoon of the risotto mixture and form it into a ball around a piece of mozzarella. Repeat until all mixture is used.

Prepare Ingredients
Chop the red bell peppers and jalapeño.

Cook the Jam
In a pot, combine chopped peppers, sugar, apple cider vinegar, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes.

Add Pectin
Stir in the pectin and boil for an additional 1-2 minutes. Pour into sterilized jars and let cool.
