Roasted Spiced Acorn Squash

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour prior to cooking.

    Marinate the Salmon

    In a bowl, combine maple syrup, soy sauce, olive oil, minced garlic, and black pepper. Place the salmon fillet in the marinade and let it sit for 30 minutes.

    Grill the Salmon

    Preheat the grill to medium heat. Place the soaked cedar plank on the grill, close the lid, and preheat for about 5 minutes. Place the marinated salmon on the cedar plank and grill for 15-20 minutes, or until the salmon is cooked through.

Roasted Spiced Acorn Squash

    Prepare the Squash

    Preheat your oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds.

    Season the Squash

    Brush the inside of the squash with olive oil and sprinkle with cinnamon, nutmeg, salt, and black pepper.

    Roast the Squash

    Place the squash halves cut side down on a baking sheet and roast for 30-35 minutes, or until tender.

Lemon Arancini

    Prepare the Arancini Mixture

    In a bowl, mix the prepared risotto with cubed mozzarella, lemon zest, and salt.

    Form the Balls

    Scoop a tablespoon of the risotto mixture and form it into a ball around a piece of mozzarella. Repeat until all mixture is used.

    Coat and Fry the Arancini

    Dredge each ball in flour, dip in beaten egg, and roll in breadcrumbs. Heat vegetable oil in a deep pan over medium heat and fry the arancini until golden brown, about 3-4 minutes per side.

Pepper Jam

    Prepare Ingredients

    Chop the red bell peppers and jalapeño.

    Cook the Jam

    In a pot, combine chopped peppers, sugar, apple cider vinegar, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes.

    Add Pectin

    Stir in the pectin and boil for an additional 1-2 minutes. Pour into sterilized jars and let cool.
