Truffle Fries

Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into thin fries.

Fry the Potatoes
In a large pot, heat oil for frying. Once hot, carefully add the fries in batches and fry until golden brown, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While still hot, drizzle the fries with truffle oil, and sprinkle with salt, black pepper, and chopped parsley. Toss to coat evenly.

Add Cream and Madeira
Pour in the heavy cream and Madeira wine, bring to a simmer. Season with salt and black pepper. Reduce the sauce slightly, cooking for about 5-7 minutes until thickened.

Combine the Components
On a serving plate, layer the truffle fries, followed by the sautéed lobster meat, and finally the cheese curds.

Drizzle with Sauce
Generously drizzle the Madeira cream sauce over the top of the poutine. Serve immediately while hot.
