Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a bowl, whisk together all-purpose flour and baking powder. Set aside.

  3. 3

    Cream Butter and Sugar

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Beat in the eggs one at a time, then stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the flour mixture to the butter mixture, alternating with the milk, mixing until just combined.

  6. 6

    Bake the Cakes

Divide the batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Filling Preparation

  1. 8

    Mix Filling Ingredients

In a bowl, combine ricotta cheese, powdered sugar, lemon zest, almond extract, and chopped almonds. Mix until smooth and well combined.

  2. 9

    Layer the Filling

Once the cakes are completely cool, place one layer on a serving plate. Spread the filling evenly over the top.

  3. 10

    Add Second Layer

Place the second cake layer on top of the filling.

Topping Preparation

  1. 11

    Whip the Cream

In a mixing bowl, whip the heavy cream until soft peaks form.

  2. 12

    Top the Cake

Spread the whipped cream over the top of the second cake layer, and garnish with chocolate shavings and fresh berries.
