Crust Preparation
- 1
Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and the crumbs are evenly coated with butter.
- 2
Press the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup or your fingers to compact it well.
- 3
Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for about 10 minutes, then remove from the oven and let it cool completely.
Filling Preparation
- 4
Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
- 5
Heat the Gelatin
After blooming, gently heat the gelatin mixture over low heat until it dissolves completely. Do not let it boil. Remove from heat and let it cool slightly.
- 6
Mix Quark and Sugar
In a large mixing bowl, combine the quark fresh cheese and powdered sugar. Beat with an electric mixer until smooth and creamy.
- 7
Whip the Cream
In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
- 8
Combine Mixtures
Gently fold the whipped cream into the quark mixture until well combined. Then, fold in the dissolved gelatin until fully incorporated.
- 9
Fill the Crust
Pour the filling into the cooled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
Topping Preparation
- 10
Prepare the Topping
Once the cake is set, carefully remove the sides of the springform pan. Top the cheesecake with fresh berries and garnish with mint leaves before serving.
