Cake Base

Prepare the Cake Base
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

In a large mixing bowl, whisk together the flour, sugar, and baking powder.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool completely in the pan before transferring to a wire rack.
Quark Cheese Mousse

Make the Quark Cheese Mousse
In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.

In a large bowl, mix the quark cheese, powdered sugar, lemon juice, and lemon zest until smooth.

In another bowl, whip the heavy cream until soft peaks form.

Gently fold the whipped cream into the quark mixture.

Heat the bloomed gelatin in the microwave for about 10 seconds until dissolved, then mix into the mousse.

Spread the mousse evenly over the cooled cake base. Refrigerate for at least 4 hours or until set.
Lemon Fluid Gel

Prepare Lemon Fluid Gel
In a small saucepan, combine lemon juice and sugar over medium heat until the sugar dissolves.

Sprinkle gelatin over the mixture and stir until fully dissolved.

Pour into a shallow dish and refrigerate until set, about 2 hours.
Berry Coulis

Cook over medium heat until the berries break down and the mixture thickens, about 15 minutes.

Strain through a fine mesh sieve to remove seeds and let cool.
Sorbet

Prepare Sorbet
In a mixing bowl, combine the fruit puree, sugar, and lemon juice.

Pour into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
