Steak Preparation

Season the Steak
Pat the KC strip steak dry with paper towels. Season both sides generously with salt and black pepper.

Mix the Ingredients
In a medium bowl, combine softened butter, parsley, chives, Dijon mustard, minced garlic, lemon juice, chopped capers, and Worcestershire sauce. Mix until well combined.

Shape the Butter
Transfer the mixture onto a piece of parchment paper. Roll into a log shape, twist the ends, and refrigerate until firm.
Potato Croquettes Preparation

Prepare the Mashed Potatoes
In a large bowl, mix the mashed potatoes, egg, grated Parmesan cheese, salt, and black pepper until well combined.

Form the Croquettes
Take a small amount of the mixture and shape it into oval or round balls. Coat each ball in breadcrumbs.

Fry the Croquettes
Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Prepare the Asparagus
Trim the woody ends off the asparagus and rinse under cold water.

Season and Roast
Toss the asparagus with olive oil, salt, and black pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 15-20 minutes, until tender.
