In a small bowl, mix cornstarch with water to create a slurry. Add this to the reduced sauce, stirring continuously until thickened. Finish with butter, and season with salt and black pepper to taste.

Blanch the broccolini in boiling salted water for about 3 minutes, then drain and shock in cold water. This keeps them vibrant and crisp.

Poaching Seckle Pears
Peel and core the seckle pears. In a saucepan, poach them in water for about 10-12 minutes until tender. Remove and let cool.
Making the Apple-Bread Dumplings

In a large bowl, combine cubed bread, diced apples, milk, eggs, sugar, cinnamon, and salt. Mix until well combined.
