Method

Preparing the Venison Steak

    Seasoning and Searing

    Season the venison steaks with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes on each side for medium-rare. Remove the steaks from the heat and let them rest.

    Preparing the Pecan Crust

    In a bowl, mix chopped pecans, breadcrumbs, minced garlic, and fresh thyme. Press the mixture onto the top of each venison steak to form a crust.

Making the Huckleberry Demi-Glace

    In a saucepan, combine huckleberries, red wine, and beef stock. Bring to a boil, then simmer for 15-20 minutes until reduced by half.

    In a small bowl, mix cornstarch with water to create a slurry. Add this to the reduced sauce, stirring continuously until thickened. Finish with butter, and season with salt and black pepper to taste.
