Beef Carpaccio

Prepare the Beef
Start by trimming any excess fat from the beef tenderloin. Pat it dry with paper towels.

Crust the Beef
Crush the black peppercorns using a mortar and pestle or a spice grinder. Rub the crushed peppercorns and salt onto the beef tenderloin, ensuring it's evenly coated.

Chill the Beef
Wrap the seared beef tenderloin in plastic wrap and chill in the refrigerator for at least 1 hour or until firm.

Slice the Beef
Once chilled, use a sharp knife to slice the beef as thinly as possible.
Caper Mayonnaise

Combine Ingredients
In a bowl, mix together mayonnaise, chopped capers, and lemon juice until well combined.
Green Bean-Mushroom Salad

Prepare the Green Beans
Trim the ends of the green beans and blanch them in boiling water for 3 minutes. Drain and immediately place in ice water to stop the cooking process.

In a bowl, combine mayonnaise, minced garlic, chopped fresh herbs, and lemon juice. Stir until smooth and well mixed.
