Preparing the Bacon Wrapped Ruby Trout

Preheat the Oven
Preheat your oven to 400°F (200°C).

Season the Trout
Season the ruby trout fillets with salt and black pepper on both sides.

Wrap with Bacon
Wrap each trout fillet with two slices of bacon, ensuring they are tightly secured.

Bake the Trout
Place the bacon-wrapped trout on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the trout is cooked through.
Making the Pistachio Butter-Herb Filling

Combine Ingredients
In a mixing bowl, combine softened butter, chopped pistachios, parsley, dill, lemon zest, and minced garlic.

Mix the ingredients until well combined and smooth.

Refrigerate
Spoon the mixture onto a piece of plastic wrap, roll into a log shape, and refrigerate until firm.
Preparing the Caper Beurre Blanc

Cook Shallots
In a saucepan, combine white wine and shallots. Bring to a simmer and reduce until only 2 tablespoons of liquid remain.

Add heavy cream to the reduced mixture and simmer for another 5 minutes.

Remove from heat and whisk in cold, cubed butter until emulsified. Stir in chopped capers, and season with salt and pepper to taste.
Making the Potato Salad

Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and let cool.

In a large bowl, combine mayonnaise, Dijon mustard, salt, and black pepper.

Add the cooled potatoes, chopped celery, and sliced green onions to the dressing. Toss gently to combine.
