Method

Add tomatoes
Pour in the crushed San Marzano tomatoes, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer over medium-low heat.

Add olives, capers and seasonings
Stir in the chopped Kalamata olives, rinsed capers, red pepper flakes, dried oregano, and freshly ground black pepper. Taste to assess saltiness — the anchovies, capers and olives add brine; hold additional salt for later.
Simmer gently to meld flavors: Reduce heat to low so the sauce holds a light simmer. Cook uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens slightly and the flavors concentrate. If the sauce becomes too thick, add up to 2 tablespoons of water.
Finishing & Serving

Toss the sauce with 1 pound (450 g) of cooked pasta of your choice (spaghetti, bucatini, or rigatoni recommended). If desired, finish each serving with a sprinkle of grated Parmesan or Pecorino and a drizzle of extra-virgin olive oil. Serve immediately.
Storage: Cool to room temperature, transfer to an airtight container and refrigerate for up to 5 days or freeze for up to 3 months. Rewarm gently on low heat, adding a splash of water if needed.
