Strawberry Purée
Prepare strawberries
Wash the strawberries under cold water, pat dry, remove the green hulls, and slice larger berries in half so pieces are roughly uniform.
Combine and macerate
Place the hulled and halved strawberries in a medium bowl. Sprinkle the granulated sugar and lemon juice over the berries. Gently toss to combine and let sit for 10–15 minutes so the sugar draws out juices and softens the fruit.
Purée
Transfer the macerated strawberries and their juices to a blender or food processor. Blend until smooth, about 30–45 seconds. If you prefer a thinner consistency, add up to 1 tablespoon cold water and pulse once or twice more.
Strain (optional)
For a silky purée, press the blended mixture through a fine-mesh sieve into a bowl using the back of a spoon. Discard seeds and solids left in the sieve.
Chill
Cover the purée and refrigerate for at least 20 minutes before using to let flavors meld. Use immediately for best color and brightness, or store in an airtight container for up to 3 days.
Serving & Finishing
To serve, spoon or drizzle the chilled purée over desserts (panna cotta, cheesecake, ice cream), fold into yogurt, mix into cocktails, or use as a sauce for breakfast items like pancakes or French toast.
Garnish with fresh mint leaves and a light dusting of powdered sugar if desired.
