Zucchini and Prep
Slice zucchini
Wash zucchini and trim both ends. Cut each zucchini into 1/4- to 1/2-inch thick strips (lengthwise if you want long planks, or into rounds/sticks depending on desired presentation). Pat pieces dry with paper towels.
Place sliced zucchini in a single layer on paper towels, sprinkle with 1 tsp salt and 1/2 tsp black pepper, let sit 10 minutes to draw out excess moisture, then pat dry again. Removing surface moisture helps the breading adhere and prevents oil splatter.

Set up dredging stations
Arrange three shallow bowls or pie plates: one with 1 cup all-purpose flour, one with beaten eggs mixed with 2 tbs milk, and one with the breadcrumb mixture (1.5 cups breadcrumbs + 1/4 cup grated Parmesan + 1 tsp Italian seasoning + 1/2 tsp garlic powder). Season the flour lightly with a pinch of salt and pepper.
Bread the zucchini
Working in batches, dredge each zucchini piece first in the flour, shaking off excess, then dip into the egg mixture ensuring even coating, and finally press into the breadcrumb mixture to coat thoroughly. Place breaded pieces on a wire rack set over a baking sheet. If coating is loose, press breadcrumbs onto the zucchini to help them adhere. Let breaded pieces rest 5 minutes to set.
Frying & Finishing
Heat oil
Pour about 1 cup vegetable oil into a large skillet to a depth of roughly 1/4 to 1/2 inch. Heat over medium-high until oil reaches 350°F (175°C) or until a breadcrumb sizzles and browns in about 10–15 seconds when dropped in. If you don't have a thermometer, look for steady bubbling around test piece but not smoking oil.
Drain
Transfer fried zucchini to a paper towel-lined baking sheet or wire rack to drain excess oil. Lightly season with a pinch of salt immediately while hot. Repeat with remaining zucchini.
Serve
Warm marinara sauce in a small saucepan or microwave. Arrange fried zucchini on a platter or individual plates with a small bowl of marinara for dipping and optional lemon wedges. Serve immediately while hot and crisp.
