Make Cappelletti Dough

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix with a fork until the dough starts to come together. Knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare Rabbit Filling

    Combine Filling Ingredients

    In a bowl, mix the shredded rabbit meat, ricotta, grated Parmesan, herbs, and black pepper until well combined.

Make Prosciutto Broth

    Prepare the Broth

    In a large pot, sauté the prosciutto, onion, carrot, and celery until softened. Add water and bay leaves. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain the broth and season with salt to taste.

Assemble and Cook Cappelletti

    Fill and Shape Cappelletti

    Roll out the rested dough to thin sheets. Cut into squares (about 3 inches). Place a teaspoon of filling in the center of each square, fold over to form a triangle, and pinch the edges to seal. Bring the two corners together and pinch to form the cappelletti shape.

    Cook the Cappelletti

    Bring a pot of salted water to a boil. Cook the cappelletti for about 3-4 minutes or until they float to the top. Remove and drain.

Prepare Fava Bean and Tomato Garnish

    In a skillet, heat olive oil over medium heat. Add fava beans and sauté for 2-3 minutes until tender. Add halved cherry tomatoes and cook until just softened. Season with salt and black pepper to taste.
