Prepare the Broth
In a large saucepan, heat the vegetable broth over medium heat. Add the minced black garlic and bring to a gentle simmer.
Poach the Cod
Carefully add the black cod fillets to the simmering broth. Cover and poach for about 8-10 minutes, or until the fish flakes easily with a fork.
Sauté the Zucchini
While the fish is poaching, heat sunflower oil in a skillet over medium heat. Add the sliced zucchini, salt, and pepper. Sauté for 5-7 minutes until tender and slightly caramelized.
Plate the Dish
Once the cod is poached, use a slotted spoon to transfer the fillets to a plate. Serve the sautéed zucchini alongside and garnish with fresh parsley.
