Preparation of Avocado and Caviar

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork to maintain some texture. Stir in fresh dill and season with salt.

    Plate the Caviar

    Spoon the avocado mixture onto a serving plate and top with the golden Osetra caviar.

Making Horseradish Cream

    Mix Ingredients

    In a small bowl, combine sour cream, prepared horseradish, lemon juice, and salt. Mix well until smooth.

Preparing Beef Tendon Chips

    Prep and Cook Tendon

    Soak the beef tendon in cold water for a few hours, then simmer in a pot of water for about 2-3 hours until tender. Drain and let cool.

    Slice and Fry

    Thinly slice the cooled tendon. Heat vegetable oil in a deep pan and fry the tendon slices until crispy. Remove and drain on paper towels, seasoning with salt and a splash of white vinegar while still hot.

Assembly

    Serve

    Serve the avocado and caviar on a plate with a side of horseradish cream and crispy beef tendon chips for dipping.
