Prepare and preheat
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or foil, leaving an overhang for easy removal; lightly butter the paper.

Melt the butter and chopped chocolate together: place butter and chopped chocolate in a heatproof bowl set over a saucepan of gently simmering water (double boiler), stirring until smooth and glossy. Alternatively, microwave in 20-second bursts, stirring between, until melted.

Whisk in sugar: remove bowl from heat and whisk in granulated sugar until incorporated. Let cool 3–5 minutes so eggs won't cook when added.

Combine dry ingredients: in a separate bowl, sift or whisk together flour, cocoa powder, and salt.

Fold batter: fold dry ingredients into the chocolate mixture just until combined — do not overmix. Fold in the chocolate chips.

Bake: spread batter evenly in the prepared pan. Bake in preheated oven for 25–30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs (you want fudgy brownies).

Combine wet ingredients: in a small saucepan over medium heat, combine heavy cream, corn syrup, and brown sugar. Whisk to dissolve the sugar.

Add cocoa and chocolate: whisk in the cocoa powder until smooth, then add the chopped chocolate. Stir constantly until the chocolate melts and the sauce is smooth and slightly thickened, about 3–5 minutes. Do not boil vigorously; a gentle simmer is fine.

Finish sauce: remove from heat, stir in butter, vanilla extract, and salt. Taste and adjust salt or sweetness if desired. Keep warm; the sauce will thicken as it cools. If it gets too thick, warm gently with a splash of cream.

Portion brownie: place one warm (or room temperature) brownie square on each serving plate.

Add ice cream: top each brownie with approximately 1 cup (or one large scoop) of vanilla ice cream. If serving multiple portions, adjust ice cream per guest (this recipe yields 4 servings).

Ladle fudge: spoon 2–3 tablespoons (or more to taste) of warm hot fudge sauce over the ice cream and brownie.

Garnish: sprinkle toasted chopped nuts over the top if using, and finish with a tiny pinch of sea salt if desired to heighten chocolate flavor.

Serve immediately: serve while the brownie is still slightly warm so the ice cream begins to melt into the hot fudge for the classic 'Mother Lode' effect.
