This red blend is a sophisticated mix of ripe berry flavors and subtle oak. This well-structured wine pairs wonderfully with steak, prime rib or lamb.

If the bottle has been stored chilled, remove it and allow it to warm to 60–65°F (15–18°C) for 20–30 minutes. If the bottle is too warm, place in a refrigerator for 20–30 minutes to reach the ideal serving temperature for a medium-bodied red.

Chill or bring to correct temperature

Check the cork and label for damage. Wipe the top of the bottle with a clean, slightly damp cloth to remove dust or residue before opening.

Inspect the bottle

Use a waiter’s corkscrew or a lever-style opener. Cut and remove the foil around the top, wipe the rim, insert the corkscrew into the cork (centered) and extract slowly to avoid cork breakage.

Open the bottle

This Mt. Diablo red blend benefits from gentle aeration. Pour the bottle slowly into a clean decanter until the last inch. Pour remaining wine into a clean carafe or hold in the bottle. Let the wine sit for 20–40 minutes to allow aromas of ripe berry and subtle oak to open up. If a decanter is unavailable, pour into a wide wine glass and swirl for 30–60 seconds to aerate.

Optional decanting

Use large-bowled red wine glasses (Bordeaux or universal red) to concentrate aromas. Ensure glasses are clean and free of detergent residue by rinsing with a small amount of room-temperature water and drying with a lint-free cloth if necessary.

Select proper glassware

Pour 5–6 oz (150–180 ml) per glass, filling to the widest part of the bowl to allow swirling. For tasting, pour 2 oz (60 ml). Hold the bottle by the base and pour smoothly; twist the bottle at the end to avoid drips.

Pouring

Present the wine with tasting notes: ripe blackberry, dark cherry, hints of cocoa and vanilla from subtle oak, medium-plus body, balanced acidity and smooth tannins. Recommend pairing with grilled steak, prime rib or herb-crusted lamb; allow meat to rest 5–10 minutes after cooking before serving alongside the wine to maximize flavors together.

Tasting notes and pairing

If wine remains, re-cork with original cork or silicone stopper and store upright in a cool, dark place or refrigerated. Consume within 3–5 days for best quality as the wine will slowly oxidize.

Reseal and store

Rinse decanter and glasses with warm water and allow to air dry. Do not use soap on decanter if you want to preserve aroma residues for subsequent use.
