    Prepare vegetables

    Rinse mixed salad greens thoroughly in cold water and spin or pat dry until crisp. Place 6 cups of greens into a large salad bowl.

    Cucumber

    If using half an English cucumber (about 1/2 cup sliced), trim the ends and slice into half-moons or thin rounds. Add to the bowl with the greens.

    Tomatoes

    Halve 1 cup of cherry tomatoes and add to the bowl.

    Onion

    Thinly slice 1/4 cup of red onion into rings or half-rings. If you want a milder onion flavor, soak the slices in cold water for 5 minutes, then drain and add to the salad.

    Carrot

    Peel and julienne 1/2 cup of carrot (or use a vegetable peeler to create ribbons). Add to the bowl.

    Avocado (optional)

    If using an avocado, halve, pit, peel and dice 1 avocado. Toss gently with the other salad ingredients just before serving to avoid browning.

    Cheese and nuts (optional)

    Sprinkle 1/4 cup crumbled goat cheese or feta and 1/4 cup toasted walnut pieces or pine nuts over the top just before serving.

Dressing

    Combine ingredients

    In a small bowl or jar, add 3 tbsp extra-virgin olive oil, 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tsp honey (or maple syrup), 1/2 tsp minced garlic, 1/2 tsp salt, and 1/4 tsp freshly ground black pepper.

    Emulsify

    Whisk vigorously for 30 seconds until the dressing is combined and slightly thickened, or close the jar and shake vigorously for 20–30 seconds. Taste and adjust seasoning with additional salt, pepper, or lemon as desired.

    Dress salad

    Drizzle the dressing over the salad just before serving — start with about half the dressing, toss gently to coat, then add more as needed to taste (about 2–3 tbsp of dressing per 4 servings total).
