Prep the broccoli
Rinse 1 lb fresh broccoli crowns under cold running water. Pat dry with a clean towel. Trim the stem end and cut into uniform florets about 1 to 1.5 inches in size; if the stems are tender, peel the outer layer and slice stems into 1/4- to 1/2-inch pieces so they cook evenly with florets.

Set up steamer
Add 1 cup of water to a medium saucepan. Place a steamer basket or metal colander inside the saucepan making sure the water level is below the basket bottom. Bring the water to a rolling simmer over medium-high heat with the lid on.

Steam broccoli
Place the prepared broccoli florets and stem pieces into the steamer basket in a single layer if possible. Cover with the lid and steam for 4 to 6 minutes, checking at 4 minutes for doneness. The broccoli should be bright green and tender-crisp — easily pierced by a fork but not mushy. If you prefer softer broccoli, steam 1–2 minutes longer.

Shock (optional)
For the brightest color and to stop cooking, transfer the steamed broccoli immediately to a bowl of ice water for 30–60 seconds, then drain well and pat dry. (If serving immediately and you prefer warmer broccoli, skip the ice bath and proceed directly to seasoning.)

Melt butter and season
While the broccoli steams (or immediately after steaming), melt 2 tablespoons unsalted butter in a small skillet over low heat or in a microwave-safe bowl. Stir in 1 tablespoon fresh lemon juice, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 1/4 teaspoon red pepper flakes until combined.

Toss with broccoli
Place the drained, steamed broccoli in a serving bowl. Pour the warm butter-lemon seasoning over the broccoli and gently toss to coat all pieces evenly, using tongs or two spoons.

Finish and serve
Taste and adjust seasoning with more salt, pepper, or lemon if desired. If using, sprinkle 2 tablespoons grated Parmesan over the broccoli and toss lightly. Serve immediately as a side dish.
