    Peel the onions and slice into 1/4- to 1/2-inch thick rings. Gently separate rings and discard small center pieces or reserve for another use. Pat rings dry with paper towels to remove excess moisture; this helps the batter adhere and reduces oil splatter.

Seasoned Flour (for dredging)

    Combine 3/4 cup all-purpose flour, 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp paprika in a shallow bowl or pie plate. Toss the onion rings lightly in this seasoned flour so each ring has a thin coating; shake off excess. This step creates a dry surface for batter to cling to.

Batter

    In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt and 1/2 tsp sugar until homogenous.

    In a separate small bowl, lightly beat 1 large egg. Add the egg and 1 tsp neutral oil (if using) to the dry mixture, then slowly whisk in 1 1/4 cups very cold club soda or sparkling water until a smooth, slightly thick but pourable batter forms. Do not overmix; a few small lumps are fine. Keep the batter cold — place the bowl in an ice bath or return to the fridge if your kitchen is warm.

    If using panko for extra crispness, spread 1 cup panko breadcrumbs on a plate. After dipping rings in batter, you will press them into panko (step in Frying) to create an outer crunchy layer.

Frying

    Pour oil into a deep heavy-bottomed pot or deep fryer to a depth of about 2–3 inches. Heat oil to 350°F (175°C). Use a thermometer to maintain temperature; too cool yields greasy rings, too hot browns them too fast.

    Working in small batches (4–6 rings at a time depending on pot size), dredge the floured onion rings briefly to remove excess flour, then dip each ring into the cold batter, allowing excess to drip back into the bowl. If using panko, immediately press both sides of the battered ring into the panko to coat lightly.

    Carefully lower battered rings into the hot oil using a slotted spoon or spider; do not overcrowd. Fry until golden brown and crisp, about 2–3 minutes per side (total 3–5 minutes) depending on thickness. Adjust heat to keep oil steady at ~350°F. Flip rings if they do not rotate on their own.

    Remove rings with a slotted spoon and transfer to a paper towel–lined wire rack or plate to drain. While still hot, season lightly with kosher or flaky sea salt to taste. Continue frying remaining rings in batches.
