Radler Base

Method

Infuse & Prepare Base

    Prep citrus

    Juice fresh lemons until you have 1 cup and juice limes until you have 1/4 cup. Strain through a fine mesh to remove pulp and seeds if you prefer a clearer drink.

    Make simple syrup (if not pre-made)

    Combine equal parts granulated sugar and water (1/2 cup sugar + 1/2 cup water) in a small saucepan. Heat gently, stirring until sugar dissolves. Cool to room temperature and chill before using. (You will use 1/2 cup.)

    Light aromatic muddle

    In a large pitcher, add the mint leaves and optional basil. Add the lemon and lime juices and 1/2 teaspoon sea salt. Using a wooden muddler or the back of a spoon, gently press the herbs just enough to release essential oils — avoid shredding them, which can make the drink bitter.

Assemble the Radler

    Combine components

    To the pitcher with the citrus and herbs, add the chilled simple syrup and stir to dissolve. Pour in the chilled light lager beer slowly to preserve carbonation. Add the chilled sparkling water/club soda and gently stir once or twice to combine. Taste and adjust sweetness, salt, or lime juice as needed.

    Season

    Add the remaining 1/4 teaspoon sea salt and 1/4 teaspoon freshly cracked black pepper to lift savory notes and echo the 'sea' in Billsburg Sea Radler. Stir gently to incorporate.

Serve & Garnish

    Rim (optional)

    If using a salted rim, rub a lemon wedge around the rim of each glass then dip into coarse or smoked sea salt to coat.

    Fill glasses with ice (about 3 cubes per serving glass). Place one lemon wheel and one lime wheel in each glass. Pour the Radler over the ice, leaving a little headspace. Finish each glass with a sprig of mint tucked in for aroma.

    Serve immediately. The Radler is best enjoyed cold and freshly mixed to keep carbonation lively. Pairs well with chili, BBQ ribs, grilled chicken, and beef — the citrus brightness and subtle savory salt/pepper balance cuts through rich, spicy, and smoked flavors.
