    Prepare ribs

    Preheat oven to 275°F (135°C). Remove membrane from the bone side of the ribs: slide a knife under the membrane at one end, lift, then use a paper towel to grip and pull it off.

    Make rub and season

    In a small bowl combine kosher salt, coarse black pepper, paprika, garlic powder, onion powder, brown sugar, and dry mustard. Pat ribs dry with paper towels, then rub the seasoning mixture evenly over both sides of the ribs. Let rest at room temperature for 20–30 minutes or refrigerate up to 2 hours for deeper flavor (if refrigerated, bring back to room temperature before cooking).

    Low-and-slow cook

    Place ribs bone-side down on a rimmed baking sheet or in a shallow roasting pan. Pour 1/2 cup apple juice or water into the pan to keep moisture in the oven. Cover tightly with foil and roast in the preheated oven for 2.5–3 hours, or until the meat is tender and pulls back from the bones about 1/4–1/2 inch.

    Sauté aromatics

    While ribs cook, heat 1 tsp neutral oil in a medium saucepan over medium heat. Add the finely chopped onion and sauté until translucent, about 4–5 minutes. Add minced garlic and cook 30–45 seconds more until fragrant.

    Cook peaches

    Add the diced peaches to the pan and cook 3–5 minutes, stirring, until they begin to soften and release juices.

    Simmer sauce

    Stir in ketchup, apple cider vinegar, brown sugar, molasses, Southern Comfort, Worcestershire sauce, smoked paprika, red pepper flakes, salt, and black pepper. Bring to a simmer, reduce heat to low, and cook gently uncovered for 12–15 minutes, stirring occasionally, until the peaches are very soft and the sauce has slightly thickened.

    Blend and finish

    Remove the pan from heat. For a smooth sauce, use an immersion blender directly in the saucepan or transfer the mixture to a blender and puree until smooth. Taste and adjust seasoning: add more salt, pepper, or sugar if desired. If too thick, thin with 1–2 tablespoons water or apple juice. Reserve about 1/2 cup of sauce for serving and set aside.

Finishing & Serving

    Glaze and caramelize

    When ribs are tender from the oven, increase oven temperature to 425°F (220°C) or preheat a grill to medium-high. Remove foil and brush the ribs generously on both sides with the peach-Southern Comfort barbecue sauce. Return to oven (or place on grill) and cook uncovered for 8–12 minutes, basting once more, until the sauce bubbles and begins to caramelize. Watch closely to avoid burning.

    Rest and slice

    Transfer ribs to a cutting board and let rest 5 minutes. Using a sharp knife, slice between the bones into St. Louis-style rib portions.

    Serve

    Arrange ribs on a platter, drizzle or brush with the reserved extra barbecue sauce, and garnish with chopped parsley if desired. Serve warm as an appetizer portion.
