Prepare the Lobster
Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 5-7 minutes until they turn bright red. Remove from water, let cool, and then extract the meat from the shells. Chop the lobster meat and set aside.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for another 2 minutes. Pour in the dry white wine, scraping the bottom of the pot to deglaze. Let the wine simmer for about 5 minutes until reduced by half.

Add Stock and Seasonings
Pour in the fish stock and add the fresh thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Blend the Bisque
Remove the bay leaf and use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and return to the pot.

Add Cream and Lobster
Stir in the heavy cream and add the chopped lobster meat. Heat through for about 5 minutes on low heat, stirring occasionally.
