Steak and Accompaniments

Method

Preparation

  1. 1

    Prepare the Chimichurri Sauce

In a bowl, combine parsley, oregano, red wine vinegar, minced garlic, olive oil, red pepper flakes, and salt. Mix well and set aside.

  2. 2

    Make the Garlic Aioli

In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and salt. Adjust seasoning and set aside.

  3. 3

    Cook the Steak

Season the ribeye steak with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Sear the steak for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

  4. 4

    Prepare the Shoestring Fries

Cook the shoestring fries according to package instructions until crispy and golden.

  5. 5

    Assemble the Dish

In a large bowl, toss arugula with lemon juice, olive oil, salt, and pepper. Place the arugula on a plate, top with sliced steak, drizzle with chimichurri, and serve with shoestring fries and garlic aioli on the side.
