Cook the Pasta
In a large pot of salted boiling water, cook the cavatappi pasta according to package instructions until al dente. Drain and set aside.

Cook the Pancetta
In a large skillet, heat olive oil over medium heat. Add pancetta and cook until crispy, about 5-7 minutes. Remove pancetta from the skillet and set aside, leaving the rendered fat in the skillet.

Prepare the Sauce
In the same skillet with the pancetta fat, add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer.

Add the Cheese
Stir in the shredded gouda and aged cheddar cheese until melted and smooth. Season with salt and black pepper to taste.

Combine Pasta and Sauce
Add the cooked cavatappi and crispy pancetta to the cheese sauce. Toss until the pasta is well coated.

Serve
Serve hot, garnished with chopped fresh parsley.
