Prepare wings
Pat the wings dry thoroughly with paper towels. Removing surface moisture helps achieve crisp skin.
Place the wings in a large bowl. Season evenly with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper; toss to coat.
Dry Rub / Crisping
In a small bowl, combine 1 tablespoon baking powder, 1 teaspoon garlic powder, 1 teaspoon onion powder and 1 teaspoon paprika. Sprinkle the dry mixture over the seasoned wings and toss until wings are evenly coated. The baking powder helps draw moisture from the skin and promotes browning and crispiness.
Arrange the wings on a wire rack set over a rimmed baking sheet in a single layer with space between pieces. For best results, refrigerate uncovered for 30 minutes to 2 hours to dry the skin further (optional).
Preheat the oven to 425°F (220°C). If you prefer, you may bake at 450°F (230°C) for a shorter time to get extra crispness—watch carefully to avoid burning.
Bake the wings on the rack for 25 minutes. After 25 minutes, flip each wing and continue baking for another 15–20 minutes until skin is deep golden brown and very crisp. Internal temperature should reach 165°F (74°C). Total bake time ~40–45 minutes depending on oven and wing size.
Buffalo Sauce (optional)
While wings are baking, make the sauce: melt 3 tablespoons unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Whisk in 1 tablespoon hot sauce, 1/2 tablespoon honey (if using), 1/2 teaspoon apple cider vinegar and 1/4 teaspoon salt until smooth and combined. Keep warm until ready to toss.
When wings are finished, place them in a large clean bowl. Pour the warm sauce over the wings and toss gently to coat evenly. Serve immediately so skin remains crisp.
If you prefer plain crispy wings, skip the sauce and serve wings straight from the oven.
Garnish & Serving
Transfer the sauced or plain wings to a serving platter. Sprinkle with 1 tablespoon chopped fresh parsley if using. Serve with 1/2 cup blue cheese dressing or ranch and celery and carrot sticks on the side.
Leftovers: cool wings to room temperature, then refrigerate in an airtight container for up to 3 days. Re-crisp in a 400°F (200°C) oven for 8–10 minutes, or air-fry at 375°F (190°C) for 4–6 minutes.
