Base spirit

Measure spirit

Measure 2 oz aged rum (or whiskey) into a cocktail shaker. Using an aged rum will lend caramel and molasses notes; whiskey will produce more oak/vanilla character.

Citrus + sweet

Add 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice and 0.5 oz simple syrup to the shaker with the spirit. Freshly squeeze citrus and strain pulp for a clean texture.

Aromatic & bittering

Add 2 dashes Angostura bitters and 1 dash orange bitters into the shaker. Bitters balance sweetness and add aromatic complexity.

Foam & garnish

Dry shake (for foam)

Add half an egg white (about Β½ of a large egg white) to the shaker. Seal and shake vigorously without ice for 15–20 seconds to create a foamy emulsion.

Wet shake and chill

Open the shaker, add 4 ice cubes, re-seal and shake hard for 10–15 seconds until the shaker is very cold to the touch and the exterior is frosted.

Strain and serve

Double-strain the mixture into a chilled coupe or Nick & Nora glass to remove ice shards and any coagulated egg bits. The drink should have a silky foam layer on top.

Garnish

Float a lime wheel on the foam or rest it on the rim. Lightly grate a pinch (~0.1 tsp) of nutmeg over the foam if desired. Serve immediately.
