Chill and prepare oysters

Keep oysters cold in the refrigerator until ready to serve. About 30–60 minutes before serving, transfer oysters to the fridge shelf that keeps them upright and stable.

Prepare serving bed

Pile crushed ice on a large shallow platter or tray to create a stable bed. Make hollows in the ice to hold oyster shells so they sit level.

Shuck oysters

Wearing a thick towel or glove on the hand holding the oyster, insert the oyster knife at the hinge and twist gently until the shell pops. Run the blade along the top shell to cut the muscle and remove the top shell. Tilt oyster to let any loose liquid (liquor) collect in the bottom shell; if needed, use the knife to cut the bottom muscle to release the oyster into the shell. Repeat for all 12 oysters, arranging them on the prepared ice. Discard top shells or reserve for presentation if desired.

Final temperature check

Keep oysters on the ice, cold but not frozen. Serve immediately once all oysters are shucked (within 15–20 minutes) to maintain freshness and texture.

Mignonette Sauce

Combine the red wine vinegar and finely minced shallot in a small bowl. Add the black pepper, fine sea salt and minced chives. Stir and let rest for at least 10 minutes to allow flavors to meld. Taste and adjust salt or vinegar balance as desired. Chill until serving.

Cocktail Sauce

In a small bowl, whisk together ketchup, prepared horseradish, Worcestershire sauce, fresh lemon juice and hot sauce (if using). Taste and adjust horseradish or hot sauce to preferred heat level. Refrigerate until ready to serve.

Garnish & Service

Arrange shucked oysters on the bed of crushed ice. Place small bowls or spoons of mignonette and cocktail sauce on the platter. Add lemon wedges and scatter microgreens or parsley for color. Provide crackers or baguette slices on the side if desired. Serve immediately with extra napkins and an oyster knife and instruct guests to squeeze lemon or spoon a small amount of sauce onto each oyster before eating.
