Prepare and measure

Chill a coupe or old-fashioned glass by filling with ice water while you assemble ingredients. Measure 2 oz rye or bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup and 0.5 oz egg white (if using).

Dry shake

Add whiskey, lemon juice, simple syrup and egg white to a cocktail shaker without ice. Firmly dry-shake for 15–20 seconds to emulsify the egg white and create a froth.

Wet shake

Add ice (about 4 large cubes) to the shaker and shake vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.

Strain

Dump the ice water from your chilled glass, then double-strain the cocktail into the glass using a fine-mesh strainer (or Hawthorne plus fine strainer) to remove ice shards and ensure a silky texture.

Float / Garnish

Wine float

Carefully pour 0.5 oz dry red wine over the back of a spoon held just above the cocktail surface so the wine floats as a thin layer on top. This creates the characteristic NY Sour two-tone look.

Finish

Express a lemon twist over the top to release oils (or drop a cocktail cherry into the drink), then place the twist on the rim or float it on the foam. Serve immediately.
